Oh My Shortbread

1 cup softened unsalted butter
(about 2 sticks)
½ cup sugar preferred superfine
2 cups all purpose flour
1/8 teaspoon salt
1 egg yolk
1 tablespoon cream
cream butter with a flat wooden spoon in a large bowl add sugar and beat until fluffy, stir in the flour and salt slowly, then make a well in the center for the egg yolk and the cream, and mixed together thoroughly until mixture can be pressed together to form one inch balls.

On a lightly floured surface pressed out the balls until ½ inch thick prick the tops with a fork and transfer to an ungreased baking pan, bake in a preheat oven  300 degrees for 10-12 minutes until golden brown and firm to touch, let cool on wire rack, sprinkle lightly with sugar while still warm.

Recommend served with your favorite wee spot of tea.
